Our philosophy
At Gambero Rosso, you won’t find a printed menu, only the inspiration of the day. Every morning, fresh fish arrives from the Milan fish market, bringing with it the scent of the sea and the promise of an authentic experience.
For us, cooking is not just a job: it is culture, passion and respect for what nature offers us. Chef Antonio ‘Totonno’ Argenziano, with a lifetime spent in prestigious kitchens and travelling across continents, perfectly embodies the meaning and culture of the express cuisine.

There are those who spend their entire lives chasing a job.
And then there are those, like Antonio “Totonno” Argenziano, who have been lucky enough to choose their passion and turn it into a profession.
With his white hair and youthful gaze, he recounts how he travelled from Japan to the Americas, cooked in high-end establishments and found his true home in the kitchen.
‘Nowadays, my job is more of a hobby,’ he says with a smile. Because cooking – especially fish – is culture, enjoyment and satisfaction for him. Three ingredients that are never missing from his dishes.
